The WSD-1200H is a dual-probe plug-and-play PID temperature controller for controlling the temperature of the Bradley Smoker and other electric smokers. The original temperature control mechanism of the Bradley Smoker is unstable and inaccurate. For the same dial position, the smoking temperature can vary significantly depending on content in the smoker, ambient temperature, wind speed, ambient humidity, and even the direction of sunshine. Utilizing a special PID algorithm, this controller is able to automatically adjust power to the heater in order to compensate for these disturbances and maintain the smoking temperature to within one degree precision.

This controller has two sensor probes, 6 programmable steps, and an AC output that is synchronized with program step(s). Users can use the first probe to control the temperature of the smoker cabinet. The second pointed probe is used to be inserted into food so that the internal temperature can be monitored. The ending criteria of each step can be determined either by the preset time or the preset internal food temperature. For cooking small-sized food or smoking the surface of food, users can use the preset time as a reference point to finish the step. Using the internal temperature as the reference point is important for cooking larger sized food, because it is difficult to know how much time is needed to cook this large sized food. For example: You can program the temperature to start at 120 °F for 1.5 hour of smoking, increase to 132 °F for 2.5 hours and finish at 190 °F until the internal temperature reaches 170 °F. Then, the controller can either turn on a buzzer to let you know the food is ready, or drop the temperature to a lower set point to keep the food warm until you are ready to serve it. This will save you time waiting by the smoker to change the settings manually when each step is finished. The synchronized AC output can be used to turn on and off the smoker generator with the program step(s). For example, you can program the smoker to dry the sausage at 140F until the internal temperature reaches 100F (step 1), turn on the Bradley Smoker generator for 2 hours at 150 °F (step 2), then, turn off the generator to continue the next step. (This function might not be used for Bradley Digital Smoker because it has a built-in timer).  Up to two program steps can by synchronized with the AC output. 

This new model, WSD-1200H, replaces the previous WSD-1204CPH & WSD-1200GPH. The “H” series controller made several important improvements and enhancements over the “C” series controller.
1) Improved durability for the sensor probe. The new sensor has more moisture-resistance, a larger temperature range, and a more durable cable and plug. The sensor is immersible in water and can also be used for Sous Vide cooking.
2) A memory function that allows customers to store up to 8 temperature profiles for different recipes.
3) A function key that can turn off the program mode if users only want to cook at single set temperature without using timer. 

Temperature Probe: 
This controller comes with two temperature probes: Probe 1 (which measures temperature of the smoker cabinet) and probe 2 (which measures the food internal temperature).

Probe 1 options: 

  1. WS-SENSOR17: The original free-hanging probe can be fed through the top venting hole of most smokers and provides an accurate temperature reading. 
  2. WS-SENSOR19: The wall mount probe gives the smoker controller an aesthetic and clean appearance, with a maximum mounting thickness of 0.87" (22mm). 

Probe 2 options: 

  1. Standard food probe: WS-SENSOR18. It is a L-shape with a pointed tip. Max temperature is 570F. 
  2. Miniature food probe: WS-SENSOR22. It has a thin and small tip, suitable for small pieces of meat, such as fish and sausage. Max temperature is 400F. See more details here

Note: 
1) For Bradley Digital Smoker owners, an extra power cord is needed for the smoker generator. You can either purchase an extra power cord by checking the box for "extra 18 AWG power cord" (NEMA 5-15P to C13 Power Cord), which is above "sensor type option" or using a regular computer power cord of your own.

2) The input power cord has NEMA 5-15P plug. International customers can by an adapter plug like this (link) from our website or from local stores. For the output socket (for heater output socket), a two-prong EU plug can be fit in. International customers can also buy a adapter for US socket  (link) or a power cord with NEMA 5-15P plug (link) and install a plug that can fit to local power strip.

3) If you own a very old Bradley Smoker generator that doesn't have the C13 socket (made before 2003),  you may need a C14 to NEMA5-15R power cord. You can order the optional power cord if you need one.

4)  The power rating is 1450 watts for 120VAC, more than sufficient for the 500 watts required by the Bradley smoker. It will also work for Bradley Smokers that have an additional 500 watts heater installed. If you are going to use it for larger smokers, you need make sure the total power drawn, including the smoker generator control output, should not exceed 1450 Watts at 120V (or 2000 Watts at 240V). 

5) This controller can not be used to drive Brinkmann electrical smokers, which all have 1500W heating elements. For controlling Brinkmann electrical smokers, please select WSD-1500GPH
