The WS-1211H is a plug-and-play PID temperature controller for Bradley Smokers and other electric smokers. The original temperature control mechanism of the Bradley Smoker is unstable and inaccurate. For the same dial position, the smoking temperature can vary significantly depending on content in the smoker, ambient temperature, wind speed, ambient humidity, and even the direction of sunshine. Utilizing a special PID algorithm, this controller is able to automatically adjust power to the heater in order to compensate for these disturbances and maintain the smoking temperature to within one degree precision.
Operating the temperature controller is easy: plug the smoker to the back of the controller, drop the sensor into the smoker from the top venting hole, turn on the controller and smoker, and set the cooking temperature and timer. When finished, the alarm will notify you the food is ready.
This model has a 6-step programmable temperature function. It can set each step of smoking to different temperatures and durations, ranging from 0.1 to 99.9 hours. This function is useful for recipes that require a low starting temperature and a high ending temperature. Here is an example recipe for smoked salmon: You can program the temperature to start at 120°F for 1.5 hours of smoking, increase it to 132°F for 2.5 hours and finish it at 175°F for 1 hour (See pictures of our results below). It saves you time from waiting for each step to end, to change the set temperature manually.
This new model, WS-1211H, replaces the previous WS-1211GPH. The "H" series controller uses a small size sensor connector, which is compact and durable than the large connector used in "G" series controller.
We now offer three types of sensors for this smoker:
1) The original sensor (WS-SENSOR17) is the most popular sensor. It provides a very accurate temperature reading and it can be fed through the top venting hole into the smoker.
2) Wall-mount sensor (WS-SENSOR19) gives an aesthetic appearance.
3) Sous Vide immersion sensor (WS-SENSOR21). This sensor has a 4 ft long thin ribbon cable that is optimized for sous vide cooking. The thin ribbon cable minimizes the gap between the lid and pot that can come from dropping the wired sensor into the pot. You can find more choices by clicking here.

Application example

Note:
1) For Bradley Digital Smoker owners, an extra power cord is needed for the smoker generator. You can either purchase an extra power cord by checking the box for an "extra 18 AWG power cord" (NEMA 5-15P to C13 Power Cord), which is above the "sensor type option" or use a regular computer power cord of your own.
2) For international orders, a US power cord is included. Users can splice the connector of the cord to a power strip outlet that meets the local standard for the output. For the input, the controller has standard IEC 320 C13/14 sockets. Users can use a computer power cord that meets the local standard to power it.
3) The power rating is 1200 watts for 120V, more than sufficient for the 500 watts required for Bradley smokers. If you are going to use it for other larger smokers, you can purchase our multi-purpose controller WS-1510ELPM.
