I built the Electric Brewery (www.electricbrewery.com) but didn't go HERMS, went RIMS. I had a hard time getting a PID to not overshoot my mash step temperatures with the RIMS, or maintain a rolling boil without constantly boiling over.
I tried a few different PID controllers, tried auto-tuning, read up on manual tuning, etc. Maybe my 5500W 230VAC heating element in my RIMS tube was too much, but I couldn't get a regular PID to work the way I wanted without investing more time and money.
I was recommended the EZ Boil, and it did everything I needed it to do. I can hold my mash step temperatures within a few degrees, and I can dial down the output power on my heating element to maintain a rolling boil.
I do find I have to adjust the overshoot and attenuation settings depending on mash temperature, but once you've read the directions and get the hang of it, it's easy.
I'm also a fan of their beer timer, which I have, too. Overall, great products and great customer service.
